Updated: Mar 28

Are you looking for a unique and flavorful dish to add to your repertoire? Look no further than Mufushwa, a traditional Zimbabwean dish made with dried vegetables and a rich peanut butter sauce. This dish is not only delicious, but also packed with nutrients and easy to make in your own kitchen. So let's get started on this step-by-step guide for making Mufushwa at home!

Ingredients:

- 2 cups of dried vegetables (such as pumpkin leaves, cowpeas, or black-eyed peas)

- 1 onion, diced

- 2 cloves of garlic, minced

- 2 tablespoons of vegetable oil

- 1 cup of peanut butter

- 1 cup of water

- Salt and pepper to taste

Instructions:

1. Start by rehydrating the dried vegetables. Place them in a bowl and cover with water. Let them soak for at least 2 hours or overnight.

2. In a large pot, heat the vegetable oil over medium heat. Add the diced onions and minced garlic, and sauté until they become translucent.

3. Drain the soaked vegetables and add them to the pot with the onions and garlic. Cook for about 10 minutes, stirring occasionally.

4. In a separate bowl, mix together the peanut butter and water until well combined. Slowly pour this mixture into the pot with the vegetables, stirring continuously.

5. Let the vegetables and sauce simmer for about 15 minutes, until the vegetables are tender and the sauce has thickened.

6. Taste and add salt and pepper as needed.

7. Serve the Mufushwa hot over a bed of rice or with a side of bread for dipping in the sauce.

This dish can also be made with fresh vegetables, but using dried vegetables adds a unique texture and depth of flavor. You can also add in other ingredients such as diced tomatoes, chili peppers, or even meat for a heartier version.
