Instructions:

2. In the same pot, add the chopped onion and garlic. Cook until the onion is translucent.


3. Add the diced Busala or Lusala roots to the pot and cook for 5 minutes.


4. Return the beef to the pot and add the chopped carrots and potatoes.


5. Pour in the can of diced tomatoes and beef broth. Stir in the tomato paste, dried thyme, and dried rosemary. Season with salt and pepper to taste.


6. Bring the stew to a boil, then reduce the heat to low and let it simmer for 2 hours, stirring occasionally.


7. After 2 hours, the beef should be tender and the vegetables should be cooked through. If the stew is too thick, you can add more beef broth to thin it out.


8. Serve the stew hot and garnish with fresh herbs, if desired.
