Once the milk has cooled down, add 2 tablespoons of plain yogurt to the milk and mix well. You can also add sugar at this stage if you want a sweeter taste.


Step 4: Pour the mixture into a jar


Transfer the milk and yogurt mixture into a clean mason jar or airtight container. Make sure to leave some room at the top as the milk will expand during fermentation.


Step 5: Let it ferment


Place the jar in a warm place, such as a cupboard or on top of the refrigerator, and let it ferment for 12-24 hours. The longer you let it ferment, the tangier and thicker it will become.


Step 6: Refrigerate and enjoy


Once the madila has reached your desired level of tanginess, refrigerate it for a few hours before serving. This will also help it to thicken even more. Now, your homemade madila is ready to be enjoyed!
