Ingredients:

- 1 pound of beef, cubed

- 1 onion, chopped

- 2 cloves of garlic, minced

- 2 tomatoes, chopped

- 1 sweet potato, peeled and diced

- 1 cup of pumpkin, peeled and diced

- 1 cup of cabbage, chopped

- 1 cup of spinach, chopped

- 1 cup of corn kernels

- 1 cup of chopped green beans

- 1 cup of chopped carrots

- 1 teaspoon of ground ginger

- 1 teaspoon of ground cumin

- 1 teaspoon of ground coriander

- 1 teaspoon of ground cinnamon

- Salt and pepper to taste

- 6 cups of beef or vegetable broth

- 1 cup of coconut milk

- Fresh cilantro for garnish (optional)

Instructions:

1. In a large pot, heat some oil over medium-high heat. Add the beef cubes and cook until browned on all sides. Remove the beef from the pot and set it aside.

2. In the same pot, add the onion and garlic and cook until they are soft and fragrant. Then, add the tomatoes and cook until they are slightly softened.

3. Add the sweet potato, pumpkin, cabbage, spinach, corn, green beans, and carrots to the pot. Mix well and cook for a few minutes.

4. Sprinkle in the ground ginger, cumin, coriander, cinnamon, salt, and pepper. Stir to evenly distribute the spices.

5. Pour in the beef or vegetable broth and bring the soup to a boil. Once boiling, reduce the heat to low and let it simmer for about 20 minutes, or until the vegetables are tender.

6. Add the cooked beef back to the pot and stir in the coconut milk. Let the soup simmer for an additional 10 minutes to allow the flavors to blend together.

7. Once the soup is done, remove it from heat and let it cool for a few minutes before serving.

8. Serve the Lephutshi soup hot and garnish with fresh cilantro, if desired.
