Updated: Mar 28

Kudu stew is a hearty and delicious meal that is perfect for a cold winter's night. This traditional African dish is made with tender chunks of kudu meat, vegetables, and flavorful spices. If you're looking to impress your family and friends with your cooking skills, then follow this step-by-step recipe for the ultimate kudu stew.

Ingredients:

- 2 pounds of kudu meat, cut into bite-sized pieces

- 1 onion, chopped

- 3 cloves of garlic, minced

- 2 carrots, peeled and chopped

- 2 potatoes, peeled and chopped

- 1 cup of chopped tomatoes

- 1 cup of beef broth

- 1 tablespoon of tomato paste

- 1 teaspoon of paprika

- 1 teaspoon of cumin

- 1 teaspoon of thyme

- Salt and pepper to taste

- 2 tablespoons of olive oil

- 2 tablespoons of flour

- Fresh parsley for garnish

Instructions :

Step 1: Marinate the Kudu Meat

In a large bowl, combine the kudu meat, chopped onion, minced garlic, paprika, cumin, thyme, and a pinch of salt and pepper. Mix well and let it marinate for at least 30 minutes or overnight for maximum flavor.

Step 2: Brown the Kudu Meat

In a large pot, heat 2 tablespoons of olive oil over medium-high heat. Add the marinated kudu meat and cook until browned on all sides, about 5-7 minutes. Remove the meat from the pot and set it aside.

Step 3: Sauté the Vegetables

In the same pot, add the chopped carrots and potatoes. Sauté for 5 minutes until slightly softened. Then add the chopped tomatoes and cook for another 2 minutes.

Step 4: Add the Kudu Meat and Broth

Return the browned kudu meat to the pot with the sautéed vegetables. Pour in 1 cup of beef broth and 1 tablespoon of tomato paste. Stir everything together and bring it to a boil.

Step 5: Simmer and Thicken

Reduce the heat to low and let the stew simmer for 40 minutes, stirring occasionally. In a small bowl, mix 2 tablespoons of flour with 2 tablespoons of water until it forms a smooth paste. Add this mixture to the stew and stir well. Let it simmer for an additional 10 minutes to thicken.

Step 6: Garnish and Serve

Once the stew has thickened to your desired consistency, turn off the heat and let it cool for a few minutes. Garnish with fresh parsley and serve hot with crusty bread or rice.

Tips and Tricks:

- For an extra kick of flavor, you can add a chopped chili pepper or a dash of hot sauce to the stew.

- If kudu meat is not available, you can substitute it with beef or venison.

- For a richer flavor, you can use homemade beef broth instead of store-bought.

- This stew tastes even better the next day, so feel free to make it ahead of time and reheat it when ready to serve.
