Instructions :


  1. Start by heating some oil in a large pot over medium heat. Add in the diced onions and cook until they are softened, about 5 minutes. Then, add in the minced garlic and grated ginger and cook for another minute until fragrant. Next, add in all the spices – curry powder, cumin, coriander, turmeric, and paprika – and stir for about 30 seconds until they become fragrant.

  2. Now it's time to add in the chicken. Cook it for about 5 minutes until it is lightly browned on all sides. Then, pour in the diced tomatoes and chicken broth. Stir everything together and let it come to a simmer. Once it starts simmering, reduce the heat to low and cover the pot. Let it cook for about 20 minutes, stirring occasionally.

  3. While the chicken is cooking, it's time to prepare the bread. Cut the loaf into quarters and carefully remove the inside, leaving a thick crust to hold the filling. Keep the bread pieces aside.

  4. After 20 minutes, add in the drained and rinsed chickpeas and frozen peas to the pot. Stir everything together and let it cook for another 5 minutes. The chicken should be fully cooked and the sauce should be thick and flavorful.

  5. Now, it's time to assemble your Bunny Chow. Take each bread quarter and fill it with the chicken and vegetable mixture, making sure to leave some space at the top. Top it off with some fresh cilantro for a burst of flavor and color.
