Instructions :


Step 1: Prepare the sheep head


Start by thoroughly cleaning the sheep head and removing any excess hair. Cut off the ears and remove the eyes and tongue. Cut the head into smaller pieces, making sure to include the cheek meat.


Step 2: Marinate the meat


In a large bowl, mix together the olive oil, paprika, cumin, coriander, black pepper, and salt. Add the meat to the bowl and make sure it is evenly coated with the marinade. Cover the bowl and let it marinate in the fridge for at least an hour or overnight for maximum flavor.


Step 3: Sauté the vegetables


In a large pot, heat some olive oil over medium heat. Add the chopped onions and garlic and sauté until they become translucent. Then, add the chopped tomatoes and cook until they soften.


Step 4: Cook the Skopo


Add the marinated meat to the pot with the vegetables and stir well. Then, add the tomato paste and stir again. Pour in the water and bring the mixture to a boil. Once it starts boiling, reduce the heat and let it simmer for about two hours or until the meat is tender.
