Delicious and Easy Isophi (Samp & Beans) Recipe for the Perfect Comfort Meal

Ingredients:


- 2 cups samp


- 1 cup dried beans (any variety)


- 1 onion, chopped


- 2 cloves of garlic, minced


- 2 tablespoons vegetable oil


- 2 tablespoons butter


- 1 teaspoon paprika


- 1 teaspoon cumin


- 1 teaspoon dried thyme


- Salt and pepper to taste


- Fresh coriander, chopped (optional for garnish)



Instructions:


1. Soak the samp and beans overnight in separate bowls. This will help to soften them and reduce the cooking time.


2. In a large pot, heat the vegetable oil and butter over medium heat. Add the chopped onion and minced garlic and sauté until translucent.


3. Drain the samp and add it to the pot with the onions and garlic. Stir well and let it cook for about 5 minutes.


4. Drain the beans and add them to the pot with the samp. Stir again and let it cook for another 5 minutes.


5. Add enough water to cover the samp and beans by about an inch. Bring it to a boil and then reduce the heat to low.


6. Add the paprika, cumin, and dried thyme to the pot. Give it a good stir and let it simmer for about an hour, stirring occasionally.


7. After an hour, check the samp and beans for tenderness. If they are still too hard, let it cook for another 30 minutes or until they are soft and fully cooked.


8. Once the samp and beans are cooked, add salt and pepper to taste. You can also adjust the seasoning to your liking by adding more paprika or cumin if desired.


9. Serve the Isophi hot, garnished with fresh coriander if desired. This dish goes well with a side of steamed vegetables or a fresh salad.
