Instructions:


1. Start by heating a large cast iron pot over medium-high heat. Add a drizzle of olive oil and once hot, add the beef cubes in a single layer. Cook for 3-4 minutes on each side until nicely browned. Remove the beef from the pot and set aside.


2. In the same pot, add the onions and garlic. Sauté for a few minutes until softened and fragrant.


3. Add the carrots, potatoes, green beans, peas, and red bell pepper to the pot. Stir to combine with the onions and garlic.


4. Return the beef to the pot and pour in the can of diced tomatoes. Add the beef broth, bay leaf, thyme, oregano, and season with salt and pepper.


5. Give everything a good stir and bring the pot to a simmer. Once simmering, reduce the heat to low and place the lid on the pot.


6. Let the Potjiekos cook for 2-3 hours, stirring occasionally. The longer it cooks, the more tender and flavorful the beef will become.


7. After a few hours, remove the lid and check the tenderness of the beef. If it is still a bit tough, continue to cook for another 30 minutes to an hour.


8. Once the beef is tender and the vegetables are soft, remove the pot from the heat and let it rest for a few minutes.
